Beer Battered Fish with Lime Aioli
160g flathead fillet
Beer batter
300ml beer
50ml soda water
250g self raising flour
Pinch of salt
Lime aioli
1⁄2 tbsp Dijon mustard
1⁄2 lime, juiced
1 tsp crushed garlic
1 tbsp white wine vinegar
3⁄4 tsp salt
300ml canola or vegetable oil
1 egg
1. Place the
beer into a mixing bowl and slowly add flour while gently whisking. Add
salt and soda water and whisk until smooth.
2. For the aioli
put the mustard, egg, vinegar and salt into the food processor, turn on
the machine and slowly add the oil until you have a thick emulsion. Add
the lime juice at the end.
3. Coat the fillet
in the batter and deep fry. Serve with aioli on the side and with roasted
tomatoes. |
